Spring has officially sprung and that means bright florals, warm sunshine, and refreshing fare. Some of the best springtime foods are handcrafted salads. Instead of heading to that overpriced corner cafe or high-priced salad stop, consider making a homemade salad in your very own kitchen. Raw Food Salad - The Raw Food Detox Diet by Natalia Rose

Ingredients

4 medium beets, peeled and cut into small cubes

1 tablespoon extra-virgin olive oil, optional
-
1/2 medium red onion, finely diced
-
3 garlic cloves, minced
-
1 teaspoon crushed red pepper flakes
-
1 teaspoon thyme leaves
-
1 lemon, juice and zest
-
Salt and pepper to taste
-
2 to 3 zucchini, spiralized or julienned
-
Handful of torn basil leaves
-
Handful of mint leaves
Instructions: Lightly steam the beets until al dente (about 5 to 10 minutes in a steamer). Toss the hot beets with the oil, red onion, garlic, red pepper flakes, and thyme. Add the lemon juice, and season with salt and pepper as desired. Let sit and marinate for at least 5 minutes. Toss the marinated beets with the zucchini spaghetti and top with the basil, mint, lemon zest, and nutritional yeast or goat feta.
Raw Caesar Dressing - The Raw Food Detox Diet by Natalia Rose
Ingredients

1/4 cup cold-pressed olive oil
-
2 cloves garlic, chopped (I love garlic so I used 3)
-
4 medium stalks celery, cut into thirds
-
1/2 cup water
-
1/4 cup Nama Shoyu soy sauce
-
2 organic tablespoons of sweet white miso
-
5 organic unsulfured dates - Remember to remove the pits!
-
Freshly ground pepper to taste
Instructions: Blend all the ingredients in a blender and serve over romaine lettuce. This is a neutral dressing and may also be used as mayonnaise. Simply use less water for a thicker consistency.

Breakfast Berry Recipe
If you love salads, you will enjoy this breakfast salad recipe from Margaret herself. “You're going to love this combination of berries, cilantro, and raw almonds for breakfast,” she shares. Simply use fresh raspberries, blueberries, strawberries, and blackberries. Margaret says if they are not sweet, add 1/2 teaspoon of raw honey to the mix. Then, chop fresh cilantro and mix. Use seven raw almonds - you don't want to overdo it. Crush and sprinkle them over the top and enjoy! Photo credit:

Cabbage and Gigandes Beans Salad
Ingredients

1/2 red cabbage, shredded

1/2 white onion, diced
-
10 Gigandes beans, cut into small pieces
-
6 grape tomatoes, cut in half
-
2 large dates, cut into small pieces
Dressing
-
2 tablespoons cold pressed olive oil
-
2 tablespoons fresh lemon
-
1/4 teaspoon powdered vegetable broth
-
1/2 teaspoon powdered garlic
-
1 large pitted date - The dates make the dressing creamy and sweet!
Instructions: Blend all of the salad dressing ingredients in the blender. Add salt to taste and black pepper. Pour over salad and enjoy!
